Butternut and Barley Salad.

This is a lovely nutty and sweet salad that with the addition of crumbled feta cheese will make a complete lunch. Add crusty or Turkish bread as a side.
Loads of very healthy ingredients.

1 small butternut pumpkin halved and cut into wedges,
1Tblsp olive oil
80g barley-simmer 25minutes, drain.
1Tblsp mild mustard
Juice of one orange
2 handfuls of rocket
Half a cup of slivered almonds, lightly roasted.
Handful of parsley,  chopped


Oven at 200C

  • Toss butternut in oil - season. Roast 20 minutes.
  • Mix mustard and orange juice 1teasp oil and salt and pepper
  • Add barley and butternut when cool
  • Combine all ingredients on a shallow platter
Pour the dressing over. Serve at room temperature.
Goes nicely with a blue cheese as well as Feta

A great accompaniment to a Quiche.
