Loads of very healthy ingredients.
1 small butternut pumpkin halved and cut into wedges,
1Tblsp olive oil
80g barley-simmer 25minutes, drain.
1Tblsp mild mustard
Juice of one orange
2 handfuls of rocket
Half a cup of slivered almonds, lightly roasted.
Handful of parsley, chopped
Oven at 200C
- Toss butternut in oil - season. Roast 20 minutes.
- Mix mustard and orange juice 1teasp oil and salt and pepper
- Add barley and butternut when cool
- Combine all ingredients on a shallow platter
Goes nicely with a blue cheese as well as Feta
A great accompaniment to a Quiche.
